HEALTHY BACON AND EGGS BREAKFAST

If your man really dislike the word ‘healthy’ or ‘vegetable’ or even worse eating them, then I know you’ll have a challenge on your hands to get him to eat vegetables or healthy dishes BUT ‘healthy’ and ‘vegetable’ don’t have to be a swearword when it’s come to feeding him! You just have to learn to hide them just like you hide your shopping or that new pairs of shoes or dresses you just bought. YOU JUST HAVE TO BE CREATIVE!

Here is a tasty but healthy breakfast you can whip up in no  time that he will love with out thinking it is not manly enough!

INGREDIENTS

  • 1 egg – preferred free range
  • 2 slices of short cut bacon
  • Half avocado, roughly mashed with fork
  • slices of fresh tomato
  • one piece of bread, toasted, preferred whole grained or wholemeal
  • pinch of salt and pepper
  • 1 teaspoon of Parmesan cheese for garnish
  • Chive for garnish

TO MAKE HIS BREAKFAST

Put the jug!

I recommend for you to use the best – quality egg you can afford. Get yourself medium pot and fill it half way with boiling water from the kettle. Bring it to a light simmer over a medium heat, add a pinch of sea salt. Crack the egg into a cup/small bowl and gently pour it into the water in one fluid movement. You will see the egg will begin to cook immediately. For a really soft poached egg should take around 3 minutes and a soft to firm one will need 4-5 minutes.

When they’re ready, remove them to some kitchen paper to dry off.

In the mean time, lightly fry the bacon in very little olive oil as possible until bacon is lightly brown or crispy to your liking.

Cut avocado in half and roughly mash one half with a fork, save the other half in the fridge with the seed in to keep it fresh.

Make the toast by toasting it in the toaster or under the grill.

TO SERVE HIS BREAKFAST

Place the toast on a plate, top with mashed avocado then sliced tomatoes, season it with sea salt and pepper to your liking.

Place the cooked bacon on top of tomato slices then top with poached egg and season once again with salt and pepper and garnish with Parmesan cheese and chive.
